150 g 5oz thickly sliced crusty bread

2 large egg yolk

60 ml/4tbsp extra virgin olive oil

30 ml/2tbsp lemon juice

5 ml/1tsp English mustard powder

25 g 1oz freshly grated Parmesan cheese.

1 head of Romaine lettuce, trimmed and washed

45 ml/3tbsp sunflower oil

5 ml/1tsp Tabasco sauce

2 tsp/10ml Worcestershire sauce
