about 4 c. of unsalted broth, preferably homemade

1/2 tsp. of chili flakes (or 2 bird's eye chilies, chopped)

1 cinnamon stick

4 tbsps. of minced garlic

light soy sauce, to taste

finely sliced onion leaves, to garnish

1.2 kg. of pork belly (with bones), chopped into two-inch cubes

a drizzle of sesame seed oil

1 star anise

about 6 tbsps. of sugar

about 4 tbsps. of vegetable cooking oil

1/4 c. of Chinese cooking wine
