Ingredients:

8 cups Beef Stock (I use Kitchen Basics)

1 large can Diced Tomatoes (I use a 26 oz. box of Pomi Chopped Tomatoes)

2 cans Pinto Beans (Eden Foods canned beans come in a BPA-Free can)

2 cloves Garlic, minced

1 cup Green Chiles, chopped (see note below)

2 Tbs. Oil

1 Onion, chopped

1 tsp. dried Oregano

3 Potatoes, diced

Salt and Pepper, to taste

2 Lbs. Pork Stew Meat

In a large skillet, brown the pork stew meat in oil over medium-high heat (I use expeller pressed coconut oil because it is safe for high-heat applications and doesn't take like coconut). Add onions and cook until translucent.Add garlic and cook for just a minute more (be careful not to burn the garlic).Transfer pork, onions and garlic to a 6-qt. slowcooker.Add beef stock, potatoes, tomatoes, beans, green chiles and oregano.Taste the stew, add salt and pepper if desired. If the stew isn't spicy enough, add more green chile!Set the slowcooker to low and cook stew for 6 - 8 hours.Serve!
