4 Chinese mushrooms, rehydrated, stems removed, and thinly sliced

1 red chili, seeds removed and minced

1 tbsp Shao Hsing rice wine

½ salt (or to taste)

1 tsp sesame oil

15 oz (425g) boneless, skinless, chicken breast, thinly sliced

1 tbsp soy sauce

2 tbsp vegetable oil
