12 corn or flour tortillas

1 green bell pepper, chopped

2 tbsp honey granules

3 tbsp olive oil, divided

1 onion, chopped

salt and black pepper, to taste

1 tsp smoked paprika

1 lb sweet potato, peeled and cut into ½-inch dice
