2 teaspoon kosher salt

1 tablespoon sesame oil

1 teaspoon sesame seeds

1 cup thinly sliced shiitake mushroom caps

4 ounces dried soba noodles

1 large sweet potato, peeled, halved length-wise and cut into 1/8" slices

8 ounces firm tofu, cut into 1/2" chunks

8 cups vegetable stock

3 cups thinly sliced yellow onion
