4 egg whites

1 1/3 cups granulated sugar

3 tablespoons instant espresso powder

8 ounces semi-sweet chocolate, melted and cooled slightly

22 tablespoons (2 sticks plus 6 tablespoons) unsalted butter, softened but cool

unsweetened cocoa powder, for garnish

1 teaspoon vanilla extract

2 tablespoons water
