8 slices bacon, reserve pan drippings

2 teaspoons Cajun seasoning

1 egg

1/2 cup flour

1 1/2 teaspoons granulated garlic

2 firm, large green tomatoes cut into 1/4 inch slices

1/4 cup milk

1 1/2 cups panko bread crumbs

1 teaspoon salt

4 hoagie rolls

To assemble the sandwiches: Spread cajun seasoning on the toasted hoagie rolls, lay 2 - 3 fried green tomatoes on the bottom of the hoagie roll, top with bacon and lettuce. Repeat until 4 sandwiches are made. Serve immediately.
