2 Tbsp. + 2 tsp. coconut oil, melted and cooled or canola oil

1 egg

1 egg white

1½ cups flour

½ Tbsp. ground cinnamon

¼ tsp. ground nutmeg

¼ cup low-fat buttermilk*

¼ tsp. salt

1 cup strawberries, chopped

¼ cup + 2 Tbsp. Truvia (or ¾ cup sugar)

½ tsp. vanilla extract

¼ cup walnuts, toasted and chopped

Preheat oven to 350º F. Cut a piece of parchment paper to fit in the bottom of a 9x5 loaf pan and spray the entire pan with nonstick cooking spray.
